Mediterranean Summer Breeze Cold Yogurt Dip

Serve on warmed Pita chips!


2 lbs Greek Style yogurt, made from whole milk
1 pint heavy cream
1 tablespoon salt
2 tablespoons lemon juice
2 tablespoons garlic cloves, minced
8 tablespoons feta cheese, crumbled (French type if possible, less salty)
4 tablespoons olives, kalamata (pits removed and cut up into pieces)
1/2 cup bell peppers (any colors or combo, chopped up)
8 tablespoons spring onions, cleaned and chopped up
8 tablespoons pistachio nuts, shells removed and ground up coarsely (not fine)
Warmed Pita Chips

Combine yogurt,cream, salt, lemon juice, and garlic in a bowl and blend till smooth.
Garnish the top with feta, olives, bell peppers, green onions, and pistachios.

Chill Before Serving and serve with warmed Pita chips.

Classic Vanilla Ice Cream Recipe

Oh, this has got to be the easiest and most rewarding ice cream recipe in existence. No summer would be complete with out making this at least once!

Classic Vanilla Ice Cream Recipe

1 Quart
time to make 5 min 5 min prep

1 cup heavy cream
2 cups half-and-half
1 tablespoon vanilla extract
1/2 a vanilla bean (scraped)
2/3 cup sugar
1 dash salt

1. Combine ingredients in a blender or food processor until sugar dissolves.
2. Refrigerate until needed for ice-cream maker.
3. Pour into the ice cream maker and follow your ice-cream maker's instructions for freezing.
4. Note: Due to variances in operating times on different models, that is not included in the prep time.

When life hands you lemons...

Buy a bottle of good Vodka and make this lemonade. The Lemonade recipe comes from Paula Deen, but the addition of vodka is all mine.

Lemonade

2 cups sugar
1 cup hot water
2 cups fresh lemon juice
1 gallon cold water
1 lemon, sliced
1 Bottle of good chilled vodka

Mint sprigs, for garnish
In a 1 gallon container, place sugar and hot water, and stir until sugar dissolves. Add lemon juice and cold water to render 1 gallon. Stir until well mixed. Pour lemonade over glasses of ice, squeeze slice of lemon on top of each, and garnish with a sprig of mint.
If life has handed you lots of lemons, you will want to add more Vodka to you drink.
